 turkey & walnut pilaf with asparagus

1.5 cups (300g) basmati rice
4 x 125g turkey breast steaks
2 bunches asparagus, trimmed, halved
2 tbsp olive oil
1/3 cup (40g) chopped walnuts
1/3 cup (50g) dried cranberries
grated rind and juice of 1 lemon

  1. Cook rice in a large saucepan of boiling, salted water according to packet directions, until tender. Drain and return to saucepan.
  2. Meanwhile, season turkey. Spray a chargrill with cooking oil spray and heat on high. Cook turkey for 2-3mins each side, until cooked through. Transfer to a plate, cover loosely with foil and rest for 5mins. Cut into strips.
  3. Cook asparagus on chargrill for 2mins, until well browned and tender
  4. Heat oil in a small frying pan on high. Cook chopped walnuts for 2-3mins, until lightly browned. Place walnut and oil in a large bowl with rice, turkey, asparagus, cranberries and lemon rind and juice. Toss to combine. Serve immediately.

It was a little blah. The only thing I liked about it was the basmati rice. haha. Finally had some success with it. Next time I cook basmati rice, it’ll go with butter chicken. mmMM.
