chorizo & broccolini with eggs

1 chorizo, cut into strips
1 tbsp red wine vinegar
4 eggs
400g broccolini
300g salad greens, such as watercress, rocket & baby spinach
1 tbsp extra virgin olive oil
1/3cup (50g) pine nuts, toasted

  1. Heat frying pan on medium-high. Cook chorizo for 5mins, until crisp.
  2. Meanwhile, heat a deep frying pan filled with 8cm water on high. Add 1 tsp of vinegar and a pinch of salt. One by one, break eggs into a saucer and slide into bubbling water. Cover pan and turn off heat. Leave eggs for 3 mins until cooked. Lift out with a slotted spoon and drain.
  3. Meanwhile, steam broccolini for 2-3mins until tender. Drain. Toss with chorizo, mixed greens, oil and remaining vinegar and season to taste.
  4. Arrange salad on four serving plates and top each with a poached egg. Scatter with pine nuts and season with freshly ground pepper to serve.

seriously, I don’t believe that 1.5hr nap I had in the late arvo has anything to do with not being able to sleep just yet. meh.

always feel like I’ve got heaps of things to do, just that I dunno where to start off. We’ve still got thank-you cards to write, rearranging new furniture in the house, tidying up the garden, boxing up wedding stuff, uploading photos, printing photos etc. Like so much to do, so little time!

apart from that, decisions decisions decisions! Donald’s got an interview next week with a prospective employer in Perth, and is still waiting on two replies from two prospective employers in Singapore by end Nov. And we’ve gotten a letter from HDB about our application for a flat in Singapore saying that we’ll know if we will get a flat end Nov.

why is everything happening end Nov?! Maybe I should try and get pregnant end Nov too. Bah.

Anyhoos, cooked mexican chicken burgers for dinner earlier this evening. I was tweeting about losing 17kJ yesterday on the indoor training bike at work yesterday. Add another 1237687623kJ after the pizza & garlic bread we had for dinner last night cos we were starving and couldn’t be bothered waiting for dinner to be cooked. Been trying to cut down on junk food, but we’re still in the settling in mode haha. Or rather I am.

Ingredients for guacamole

 The recipe called for guacamole to be included in the burgers, so I had to look around in my recipe books for a recipe closest to a guacamole that a friend of mine made. His guacamole is really tasty! Found one in my Betty Crocker Cookbook ring binder. Popped out into the garden to grab a bunch of lovely smelling parsley and some ripe blueberries. Yums! I think I overdid the parsley for the guacamole haha. Didn’t make the guacamole yums, but I reckon if I didn’t overdo the amount of parsley, it would have turned out perfect!

Guacamole

2 ripe large avocados
2 tbsp lime or lemon juice
2 tbsp finely chopped coriander (
I used parsley)
1/2 tsp salt
Dash of pepper
1 clove of garlic, finely chopped
2 med tomatoes, finely chopped
1 med red onion

  1. Cut avocados lengthwise in half; remove pit and peel. Mash avocados
  2. Mix avocados and remaining ingredients in a glass or plastic bowl
  3. Cover and refrigerate 1 hr to blend flavours.
Guacamole

Mexican chicken burgers

600g lean chicken mince
35g packet taco seasoning mix
1 white onion, finely chopped
1 egg, lightly whisked
4 bread rolls, split
1 butter lettuce, leaves separated
2 tomatoes, sliced
150g guacamole

  1. Combine mince, seasoning mix, onion and egg. Shape mixture into four patties.
  2. Spray a frying pan with cooking oil spray and heat on medium. Cook patties for 5mins each side, until cooked through.
  3. Top roll bases with lettuce, tomato, patties, guacamole and remaining rolls.

 tadah! the final result. The buns sure look like they are opening their mouth really wide open. Like they are singing!! haha. Okay, weird mental image. Okay, note to self to chop onions finer next time, and maybe butter the buns just so it isn’t too dry! Otherwise, the taco seasoning made the patties quite tasty! Kinda gives me an idea to try another kind of seasoning next time. The list of diff kinds of burgers could just go on with that! haha.

Ahh..never knew cooking to be so therapeutic. =D Plenty of leftovers for lunch tmrw, which prolly means no yum cha =( Gonna give the lamb shanks recipe a try for tomorrow’s dinner. The kitchen’s gonna smell fab. mmM.
